Grape varieties: Pinot Noir, Chardonnay, Pinot Meunier. An elegant champagne crafted from a blend of two grape varieties grown on the limestone soils of the vineyards of the Paul Baru House. The grapevines have an average age of 40 years. Following manual harvesting, the berries undergo fermentation at a controlled temperature in stainless steel tanks. Secondary fermentation occurs in the bottle. The champagne is aged in bottles for a minimum of 6 years in the cellars of the winery.
