Grape variety: Carmenere. Luxurious red dry wine created by the masters of a Chilean winery in the Apalta appellation. Carmenere vines flourish in the Colchagua Valley, where the low elevation of coastal hills allows Pacific breezes to interact with the Andean winds, bringing freshness to the valley, maintaining the grape's acidity, and ensuring excellent aging potential. The grapes are harvested exclusively at night, after which they are immediately cooled down. Maceration occurs at a temperature of 8°C for 7 days. Alcoholic fermentation lasts 7-10 days at a temperature of 28-30ºC. The wine masters perform daily pump-overs, adjusting the frequency and duration based on regular tastings.
