Osso buco, osso buco or ossi-buki (Italian: osso buco) is a traditional dish of Lombard cuisine, which is a stewed veal shank, as well as the name of the semi-finished meat product used for this dish. Osso buco literally means "hollow bone" (from Italian osso - "bone" and buco - "hole"), since the bone, along with the marrow, is an ingredient of the dish.
