Tartare is a way of serving raw meat or fish. Raw meat tartare originally appeared almost simultaneously with the original tartar sauce, which was made by adding capers or pickles. Later, however, chefs introduced some changes to the recipe — tartare became any dish made of pieces of raw fish, raw or cured meat. Today, tartare has many variations, including vegan, fruit or vegetable.
