Beef tongue has been used for food for a long time – the cow as a source of meat and offal has been valued since ancient times. Since the tongue has always been considered a delicacy, it was by no means available to everyone. Thus, in medieval France, after slaughtering cows or other livestock, peasants were obliged to give tongues for the lord's table. Beef tongue is a product known and loved all over the world. The exception is only for Hindus – the cow is a sacred animal for them, so for the majority of the population of India, eating its meat or offal is taboo. Zoroastrian followers, most Sinhalese and Chinese Buddhists also do not use beef tongue. Vegetarians also refuse this product. Pork tongue is less common in cooking. It is usually used in the cuiisine of Ukraine, Poland, the Czech Republic, Hungary and Romania.
