Stracciatella (Italian: Stracciatella di bufala) is a cheese produced from the milk of Italian buffaloes in the province of Foggia, located in the southern part of the Italian region of Puglia, using the technology of extraction (pasta filata) and grinding. It is a fresh cheese made from chopped strands of mozzarella soaked in fresh cream. Strachatella is famous for being the filling for burrata, another traditional Italian mozzarella cheese. Strachatella is made from the same rennet-fermented milk clots as mozzarella. The cheese is soaked in hot water to make it flexible. Then it is stretched into thin strands, cut into small pieces and placed in a dish with cream. The mass is infused until most of the cream is absorbed into the cheese. Ready strachatela has a silky, oily, almost liquid and creamy consistency, it tastes fresh, milky and slightly sour.
