"Peking duck (Chinese: 北京烤鴨 Běijīng kǎo yā) is one of the most famous dishes of Chinese cuisine. In China, the duck is considered a symbol of happiness and the masculine principle of Yang. The dish gained widespread recognition during the Yuan Dynasty when, in 1330, the physician and dietitian Hu Sihui, responsible for the emperor's diet, published the recipe in his seminal work "The Essential Principles of Food." The duck then became popular at the Yuan court in Beijing, thus becoming widespread with its present name.
