Wild yeast, spontaneous fermentation, 12 months of aging in barrels — all these elements create the basis of a refined wine with moderate tannins, a balanced taste, and a lingering, pleasant aftertaste. "BIOLOGIST" is a Ukrainian craft organic winery with vineyards located in the Kyiv and Odesa regions. The winemakers at "BIOLOGIST" prefer minimal intervention in natural fermentation processes and strict temperature control. No artificial chemicals (herbicides and pesticides) are used to boost the immunity of the vines and soil. Instead, plant-based and mineral-derived remedies are applied.
