


The word “croquette” has French origins and comes from “croquer,” which means “to crunch.” Croquettes first appeared in France and later gained worldwide popularity both as a delicacy and as industrially produced fast food. In Spain, croquettes, especially those filled with ham, are often served as tapas. In Mexico, they are typically made with tuna and potatoes. Filipino croquettes undoubtedly appeared during Spanish colonization, but unlike Spanish croquettes made with béchamel, Filipino croquettes are made with mashed potatoes and chopped leftover meat or fish. This dish is prevalent in upper and middle-class families, much like everything brought by the Spaniards.
