



Roast beef is a dish of English cuisine consisting of a piece of beef roasted in the oven. Traditionally, roast beef is made from a piece of meat from the back of the carcass. Before roasting, the meat is marinated in oil overnight to tenderize. It is then carefully salted and roasted, often being turned frequently to prevent burning. Once cooked, the roast beef is sliced thinly against the grain and served with a side dish (roasted or fried potatoes, greens, grated horseradish), occasionally accompanied by gravy.
